Mango Mango Salad

- 3 mangoes, diced
- 4 kiwi, diced
- 2 c. blueberries
- 2-3 c. strawberries, cut
- 1 tbsp fresh lime juice
- 2 tbsp orange juice
- 2 tbsp nonfat Greek yogurt
- Mixed greens
Blend in mixer: 1/3 cup of diced mangoes, lime juice, orange juice and Greek yogurt. Blend until smooth. Serve the remaining fruit over mixed greens and drizzle with pureed “dressing.” Makes 3 delicious servings!
Easy Chicken Salad

- 1 rotisserie chicken, shredded
- 1-2 c. diced celery
- 1-2 c. chopped grapes
- 2-3 tbsp light or non-fat mayo
- Chopped walnuts (optional)
Combine all three ingredients in a bowl. Mix together with 2-3 tbsp. light or non-fat mayo (just enough to make ingredients “stick”. If extra crunch is desired, add in chopped walnuts.
Lisa’s Summer Salad

- Grilled chicken breast
- Romaine and spinach
- Lower sugar dried cranberries
- Carrot strings
- Sliced almonds
- Cucumbers
- Sliced strawberries
- Zero fat Italian dressing
Combine ingredients and toss with dressing for a delicious salad!
Easy mix and match ideas

Start with a protein: grilled chicken, turkey, sushi, cubed salmon, hard boiled eggs
Add a fruit or veggie: blueberries, apple slices, carrot slicks, cherry tomatoes, celery sticks, strawberries, orange slices, salad, cucumber, pineapple, grapes
Dip to make it fun: guacamole, low-fat ranch, mustard, honey mustard, ketchup, cottage cheese
Snacks on-the-go: popcorn, pretzels, apple crisps, bananas
